Middle notes (slower, but they last longer): A biscuit would be too sweet and monotonous without a bath of spices that make it an ancient food.
Base notes (those who support and connect all the others): To support a gourmand pyramid you need some sugary base notes, but as bitter as possible: a burnt musk, a vanilla berry peel, the bitter shell of Tonka bean and overcooked sugar brought to caramel.
